Instant Rava Modak | सूजी के मोदक । Semolina modak with Condensed milk

Instant Sooji modak using condensed milk for Ganesh Chaturthi Festival Ingredients Semolina (सूजी ) - 1/2 cup (100 gms) Milk (दूध ) - 1 cup Condensed Milk (कंडेंस्ड मिल्क ) - 1/2 cup Ghee (घी) - 2 tbsp Almonds (बादाम ) - 10 to 12 (finely chopped ) Pistachios (पिस्ता ) - 20 to 25 (finely chopped) Green cardamom (इलाइची) - 1/2 tsp ( 7 to 8 ) Powdered sugar ( पाउडर चीनी ) - 1 tbsp Saffron strands (केसर के धागे ) - 20 to 25 Direction : Getting Ready : 1.Take 20 to 25 saffron strands,put 2 tbsp milk and mix it, till the saffron gives off color. Making : 2. Take a pan, turn on flame heat it. Add ghee to the pan. Now add 1/2 cup semolina.Roast regularly by stirring it till it changes color. Keep the flame medium.Roast the semolina for full 8 to 9 minutes. Once the semolina is roasted and ready. add milk to it. Reduce the flame and stir the mix too. Add saffron milk to it too.Add 1/2 cup condensed milk to it too. Mix it well and cook until it forms a dense dough. Slightly increase the flame. 3. When dough is dense and cooked, Take it out in a separate thali and cool it. Turn off flame. Let the dough cool down. 4. For stuffing take a pan, turn on flame heat it. Once heated, Add 10 to 12 finely chopped almond pieces, 20 to 25 pistachios finely chopped, slightly roast them. Roast to remove moisture for half a minute. Turn off flame. Add 1/2 tsp cardamom powder, 1 tbsp powdered sugar , add a little dough in it so that the stuffing binds. Mix well. Once the stuffing is ready , take it out in a bowl. As the dough prepared is slightly hot, press it with a spoon. Once it slightly cools, grease your hands with ghee and slightly knead the dough. 5. To make modaks, take a modak mould,remove its pin. Put a little dough in the mould,that fits in the mould. Take a small spoon that goes inside the mould, Press and fill the dough in the mould.Leave a little space in the centre to add stuffing.Take the stuffing in a small spoon and fill in the modak mould and press it, Take out a little stuffing, and take a small spoon. Put stuffing in it and press it. Close it on all sides and make it even with hands. Then Open the mould and place the modaks in a separate plate.Prepare all the modaks likewise. Serving : 6. Delicious Semolina Modaks are ready.These are mouth drooling and sumptuous modaks. You can prepare it easily. Keep them out in open for 2 to 3 hours to dry. Fill them in a container and keep in a fridge and relish for a week. Serve these tempting Sooji Modaks to friends and family on Ganesh Chturthi and all festive occasions. The tricky part is to make ukad for modak. We will see an easy method to make ukad today. Do try modak by this method this year and drop a comment for me. You also can like, share and subscribe. Ingredients: • 1 1/2 cup Rice flour • A pinch of Salt • 1 tsp Ghee • 1/4 cup Milk • 1 tbsp Poppy seeds • 2 cups shredded fresh Coconut • 1 cup Jaggery / Gudh • Dry fruits • 1/4 tsp Cardamom powder • Nut meg powder • Saffron milk Method: • Take rice flour into a bowl. • Add salt, ghee and mix well. • Add milk and mix well. Milk gives nice white color to modak. • Add water and knead dough as chapatti dough. • The dough should neither be too thick nor too thin. • It should have medium consistency. • Spread the dough a little so that it will be well steamed. • Take the steamer upper pot and put a banana leaf at the base of it. • You can use cotton cloth in place of banana leaf. • Transfer the dough on the banana leaf. • Heat up 1-2” water in the lower pot of the steamer. • Put the pot containing dough on it. • Close the lid and steam the dough on medium heat for about 10- 15 minutes. • Turn off the gas and let the dough be in the steamer for another 10 minutes. • Heat up a pan on medium heat. • Add poppy seeds and roast a little. • When poppy seeds begin to turn light golden add shredded fresh coconut. • Roast the coconut for about 2-3 minutes until the moisture in it is removed. • Add jiggery, dry fruits and mix well. • Fry on medium heat for just 3-4 minutes after gudh melts. • Turn off the gas and add cardamom powder, nutmeg powder and mix well. Stuffing is already. • Take the ukad and knead it well once when it is hot. • You can dip your palm in cold water if you want while kneading the dough. • Transfer the ukad into a bowl and keep it covered. • Take a small ball of dough and make it nice and even. • Press the ball a little between your palms and roll a nice, even puri from it. • You can make pari using hands too. • Take the puri in your hands and pinch the edges to make petals. • Pinch the petals upto the bottom so that modak gets nice shape. • Fill the stuffing and close the petals. • Transfer the modak into the steamer. • Sprinkle a little saffron milk on the modak. • Heat up 2-3” water and transfer the pot containing modak on it. • Close the lid and steam modak on medium heat for just 10 minutes. • Turn off the gas and modak are already. Rice flour -1cup 2. Water -1&1/2cup + 1 &1/2glass 3. Salt to taste 4. Matar /Green Peas -100gms 5. Black pepper -1/4ts 6. Chaat Masala -1/2ts 7. Ghee -1tb 8. Panchporam Masala -1ts 9. Red chilli flex -1/2ts Method... Take a kadai add Water , salt and boil it, then add Rice flour and mix it continously till mixture get thick. gas off and cover for 10min. Take a mixi jar add Boiled matar and make a paste, add Pepper , salt , chaat masala mix it. Then knead Rice flour dough make it soft add matar mixture and make soft dough and make a balls. Heat a water in a steamer, keep balls plate and cover, cook for 20min. in medium flame..Soft and spongy matar balls is ready Now to make it more flavourfull Take a pan add ghee, panchporam masala, red chilli flex and steam balls then toss nicely.. our tasty and Healthy flavourfull matar balls ready to eat.
